Maple syrup: how it's produced Part 2

Canada is the largest producer of maple syrup in the world since 2008 (71% of maple syrup global market comes from Canada). In 2019 Canada produced 13,2 millions gallons of maple syrup. The province of Quebec is by far the largest producer, representing 92% of Canadian manufactury. 

The best season to harvest sap from maple trees is early spring (from late February to mid-Jun). Colour and taste of the final product depends on how early in the season sap is collected from tree. From sap harvested in eary spring we get Golden maple syrup. Closer to summer its taste is stronger and colour is darker: Amber and Dark syrup. But how they actually make all of this syrup?

After harvesting, sap is collected in gathering tanks. Then reverse osmosis machine takes a precentage of water. Next step is boiling in evaporator. when the temperature of liquid reaches 104 C the syrup is ready to draw off. The last step is filtering and then we get final product. 

The process is preaty complicated but taste of final maple syrup is amazing and worth all the effort.

  1. Is there any difference in taste between Golden, Amber and Dark syrup? Or is it just colour?
